The 1st Lidia Experiment

The instructions for this evening's experiment come from my 2nd favorite TV cooking show host Lidia Bastianich. I love this woman and her show and hopefully I'll love this Chicken Cantanzaro-Style experiment just as much.

Above is the finished bird - yeah, it's not looking so good, but uh mah gawd it was magnificently delicious!
